Recipe: Gluten Free Snickerdoodles

The baking extravaganza continues!  Today I have a quick & easy recipe for gluten free snickerdoodles.  
Ingredients:
1 box Wegman's Gluten Free Sugar Cookie Mix
6 tbsp. butter, softened
1 large egg
2 tbsp. sugar
1/2 tbsp. cinnamon
Sprinkles (I used colored sugar)

Instructions:
-Cream softened butter & 1/2 cup mix, mixing at medium/high speed for about 2 minutes until light & fluffy.
-Beat in egg.
-Slowly add remaining mix, & mix at low speed until all dry mix is combined.
-Shape dough into ball, slightly flatten, cover with plastic wrap & chill for 1 hour.
-After chilling lightly grease cookie sheets.
-Combine sugar, cinnamon, & sprinkles in a small bowl.
-Shape dough into small balls, roll in cinnamon/sugar mixture.
-Place on cookie sheet, & bake at 350 degrees on for 11-14 minutes.
-Transfer from cookie sheet onto wire cooling rack.
-Cool & enjoy!
