Recipe: Old Fashion Peanut Butter Cookies

I realized that I haven't shared a recipe on here in quite a while so I figured that I would fix that today. If you know me then you know that I absolutely love peanut butter, so as you can imagine peanut butter cookies are a favorite of mine!  While I do like Hershey Kiss Peanut Butter Cookies, I actually prefer good Old Fashion Peanut Butter Cookies, and I have a great recipe for them that I am going to share today.
Ingredients:
1 cup butter, softened
1 cup creamy peanut butter
1 cup sugar
1 cup brown sugar, firmly packed
2 large eggs
2 1/2 cups flour (or sub with this to make gluten free)
2 tsp. baking soda
1/4 tsp. salt
1 teaspoon vanilla
Extra sugar for dusting

Instructions:
-In a bowl combine flour, baking soda, and salt, mix well. 
-In a different bowl beat butter and peanut butter with an electric mixer until blended and creamy.
-Gradually add both sugars to the butter mixture, beat well.
-Add eggs to the mixture, beat well.
-Add the flour mixture to the butter mixture, beat well.
-Stir in vanilla.
-Cover the dough and put in fridge for 3 hours.
-After chilling, shape dough into small balls and place on cookie sheet.
-Using a fork, flatten cookies in a crisscross design.
-Sprinkle with sugar (I used red sugar sprinkles to make them festive!).
-Bake at 375 degrees for 7 to 8 minutes.
-Transfer from cookie sheet onto wire cooling rack.
-Cool and enjoy!
Whenever I make these they bring me back to my childhood, as they've been a favorite since then.  If you or anyone you know loves peanut butter you have to make these, trust me on that!
